Biscotti With A Twist Of Vanilla!



Hello "Out there"
I baked these cookies a few times, my grandfather loves them, especially when he has a good cup of coffee by his side. I have in the past always baked with a recipe, but now it was about time I made my own recipe. I tried to use a little vanilla sugar to give the cookies some sweetness, and it made them even better! They are super easy to make and also nice to bring as a hostess gift or whatever you call it!



Approximately 40 pieces (depending on how thick or thin you cut them)
Recipe:
2 1/4 eggs (yes it sounds a little weird, but I added a little extra of an egg to get the dough to stick better together )
165 g of sugar
65 g of butter
300 g  of wheat flour
1 teaspoon of baking powder
1 teaspoon of vanilla sugar
1/4 teaspoon of salt
250 g of almonds

Method:
Take the butter out a little time before use, so it get a little soft, or give it a few seconds in the microwave.

Turn oven at 165 degrees C hot air or 180 C normal oven.

Mix flour, sugar, baking powder, vanilla and salt in a bowl. Mix the butter in with your hands and get it mixed in well. Then add the eggs. Take the mixture out on the table and pour the 250 g almonds out on the table aswell. Knead the almonds well into the dough, all of them! Then make 3 portions and roll out in about the same length as your baking sheet maybe a few cm less at each end. In the oven for about 25 minutes or until they are about to be golden brown. Take them out and cut them into 1 ½ -2 cm thick pieces, put them on the baking sheet and bake for about 15 minutes or until golden..

Ready to serve, yum!
