Homemade Mushroom Risotto!


So are you ready for a delicious mushroom risotto? Then take a look here! It was wildly delicious, I could eat it every day ! YUM ! It was super simple and really easy to make, and quick ! This recipe is not with white wine. I have made risotto with white wine, my family loved it but I never liked wine. So now you get a recipe with no white wine in, you can always add it your self! I really love this recipe !

350 g of risotto rice
400 grams of mushrooms
1 bunch of spring onions
3 cloves of garlic
1 small onion
1.3-1.5 liters of broth
50-70 g of butter
A large handful of grated grana cheese.

Chop the mushrooms, scallions , onions and garlic. Fry in a pan or with a little fat and put set it a side . Take a large pan and melt the butter. When the butter is melted add in the rice , and " roast/fry " a few minutes. Then add the first ½cup or less of the broth , when the rice has absorbed the ½cup then add a new and so on. When the rice is close to being finished then add the mushrooms, onions , scallions and garlic in. The rice should be al dente ! Finished but with a little bite. It took about 16-20 minutes! When they are finished add the grana cheese , stir well and serve immediately !
