Delicious Tomato/Curry Soup!


It is delicious , different and spicy! It is very simple and does not require any great cooking skills! So let's get started! Sorry for the dark photo and bad quality, but Denmark is really dark here in the winter and the sun is always down a few hours before dinnertime, so right now the pictures are not that good because of the light.

6-8 people
Recipe :
2 cans of coconut milk (total of 800 ml)
3 cans of skinned tomatoes (total of 1200 g)
500 ml of vegetable stock
3 bunch of scallions
3 large onions
4 cloves of garlic
3-4 red peppers
700 g of chicken
4 tsp salt
3 tsp of curry powder
½ tsp of chili powder
a little black pepper

Method :
Chop the scallions, onions, garlic and peppers . Fry them in a large pot with a little oil. When the vegetables are soft and delicious, pour the skinned tomatoes into the pot. Then the coconut milk and broth. Stir well and then add the spices. Let the soup simmer for 1 hour. Taste with a little salt or curry if needed .

Cut the chicken in small pieces and fry in a pan . When they are finished put them in the soup, and then the soup is ready to be served! Serve possibly with some bread and some sour cream on top. Bon appetite !
